I love a cucumbers! But whenever I buy them they seem under-ripe and taste more like watermelon rind than cucumber. But lately, Wal-Mart’s produce has been on fire. Veggie Patch makes a vegetarian meatball that is to die for! When I discovered these little beauties, I decided I must find more uses for them. Originally I had tried them when I made Vegetarian Cocktail Meatballs (also known as Sweet & Sour Meatballs). These went over BIG with both vegetarians and non-vegetarians alike.
