
Iced Scottish Shortbread Cookies

These cookies are sooo easy to prepare and melt-in-your-mouth good! But they must be cooled completely before cutting or they will crumble.

Servings: 16 servings
Ingredients
- 1.5 cups flour
- 3/4 cup butter, cold
- 1/3 cup sugar
- 1 teaspoon vanilla extract (optional)
- cream cheese frosting, spread as much or as little as you like
Directions
- Preheat oven to 300 degrees and grease a 9×9 baking pan.
- Cut cold butter into small cubes for easier mixing.
- In a mixing bowl, mix together sugar and flour.
- Mix in butter and optional ingredients. You will probably want to wash and dry your hands thoroughly because mixing the butter using your hands (kneading) is considerably easier than any other method. Or you can start with a mixer to break up the pieces a bit and then continue with hand mixing/kneading.
- The mixture will be stiff so you will need to press it by hand into the baking pan.
- Bake for 30 minutes.
- To apply frosting: Do not spread on frosting, it may tear up the top of your cookie. Spoon desired amount of frosting onto the cookie while still warm. Allow to melt. Using potholders, carefully tip cookie pan from side to side to spread frosting.
- Chill in the fridge until completely cooled. Cut into squares.
