
Peach Cobbler

Who can resist a peach cobbler. This is best served slightly warm with vanilla bean ice cream!

Servings: 6 servings
Ingredients
- 1 cup sugar, divided
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 cup boiling water
- 6 tablespoons cold butter
- 1 tablespoon corn starch
- 4-6 fresh peaches, sliced
- 1 teaspoon lemon juice
Directions
- Preheat oven to 400 degrees
- For the cobbler: In a large bowl, mix the flour, sugar, baking powder, and salt. Cut in butter until the mixture resembles coarse crumbs. Stir in 1/4 cup boiling water just until mixture is evenly moist.
- For the peach mixture: In a saucepan, mix 1/2 cup sugar and cornstarch. Stir in peaches and lemon juice. Cook over medium heat stirring constantly, until mixture thickens and boils. Boil and stir 1 minute. Pour into 9×9 baking pan.
- Drop dough on top of peach mixture and bake 25 minutes.
