
Strawberry Cake

This recipe is one of Martha Stewart's. Not necessarily the easiest recipe to make, but not the most difficult. You could forgo making the batter from scratch and use a cake mix instead, following baking instructions on the box.

Ingredients
- 6 tablespoons unsalted butter, softened
- 1.5 cups all purpose flour
- 1.5 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup sugar
- 2 tablespoons sugar - for berries
- 1 egg
- 1/2 cup milk
- 1 teaspoon vanilla extract
- 1 pound strawberries, hulled & halved
Directions
- Preheat oven to 350 degrees. Grease a pie pan or small casserole dish.
- Mix flour, baking powder, and salt together into a medium bowl.
- Beat butter and 1 cup sugar in a separate bowl. Mix about 3 minutes.
- Mix in egg, milk, and vanilla.
- Gradually mix in flour mixture.
- Transfer batter to buttered pie plate. Arrange strawberries on top of batter, cut sides down and as close together as possible. Sprinkle remaining 2 tablespoons sugar over berries.
- Bake for 10 minutes. Reduce oven temperature to 325 degrees and bake for an additional 45-60 minutes or until cake is golden brown and firm.
