Thumbprint Cookies

Thumbprint cookies can be filled with jams, jellies or frosting. My personal favorite is Blackberry Jam, but raspberry and strawberry also work well. You can use any flavor of frosting for a completely different tastes, as well.

Servings: 3 dozen
Ingredients
- 1 cup butter
- 1/2 cup packed brown sugar
- 2 eggs, separated
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 2 cups all-purpose flour
- 1-2 cup chopped pecans
Directions
- Preheat oven to 350 degrees and lightly grease baking sheets.
- Cream the butter with the sugar. Beat in the egg yolks and vanilla. Stir in the flour and the salt.
- Slightly beat the egg whites.
- Shape the dough into small balls and roll in the egg whites then in the chopped nuts. Press thumb in center of cookie to make an indentation.
- Bake for 7 minutes or until lightly brown.
- Wait to cool before filling the centers with frosting or jam.
