
Breakfast Egg & Vegetable Casserole

This recipe calls for red peppers and mushrooms, but you can add any combination of vegetables you'd prefer for a delicious and filling breakfast casserole.

Ingredients
- 10 eggs
- 2 cups low fat cottage cheese
- 1/4 cup butter, melted
- 1/4 cup flour
- 1 teaspoon baking powder
- 1/2 - 1 red or green pepper, diced
- 1 cup fresh mushrooms, chopped
- 2 cups shredded cheddar cheese
- 1/2 teaspoon salt
Directions
- Preheat oven to 350 degrees.
- Mix all ingredients together in a large bowl.
- Pour into a 9×13 casserole dish and bake for 35 minutes.
