
Chili Potato Burritos

Mexi flavored mashed potatoes in a burrito!

Ingredients
- 1 box (both packets) instant mashed potatoes
- 1.5 cups red enchilada sauce
- 1 cup shredded cheddar cheese
- 2 tablespoons taco seasoning
- 1 tablespoon minced garlic
- 6 burrito sized flour tortillas
- To taste salt and pepper
Directions
- Preheat oven to 350 degrees.
- Prepare instant mashed potatoes according to package directions.
- Mix in 1/2 cup enchilada sauce, cheddar cheese, taco seasoning, garlic, salt and pepper.
- Spoon potato mixture evenly into the tortillas and roll up.
- Place burritos in a 9×13 casserole dish, pour over remaining enchilada sauce and sprinkle with cheese.
- Bake in the oven for 20 minutes.
