
Breakfast Egg Casserole

Egg casseroles were staples at our church's Easter breakfast. Now I make this at home for Easter as well as other occasions or no occasion at all. This recipe is easy and delicious. You can experiment with different cheeses or vegetarian meat substitutes.

Ingredients
- 10 eggs
- 1/4 cup flour
- 1/4 cup butter, melted
- 2 cups low fat cottage cheese
- 10 slices vegetarian bacon, chopped
- 1/4 teaspoon salt
- 1 teaspoon baking powder
- 2 cups reduced fat shredded cheddar cheese
Directions
- Preheat oven to 350 degrees.
- Beat eggs.
- Add remaining ingredients and mix well.
- Pour in a 9x13 casserole dish and bake for 35 minutes.
