
Vegetarian Chicken Wellington Casserole

Here is a vegetarian version of chicken wellington in a casserole form!

Servings: 8 servings
Ingredients
- 1 package Worthington Chick-ett
- 8 ounces canned mushrooms
- 6 ounces Nuefchatel cheese, softened to room temperature
- 1 package small frozen spinach, thawed
- 1 package refrigerated crescent rolls (preferably without seams)
- 1/3 cup vegetable broth
Directions
- Heat cream cheese and broth over medium heat in a skillet until soupy.
- Pour in a 9×13 casserole dish and add remaining ingredients (except crescent rolls).
- Cover and bake for 20 minutes at 350 degrees.
- Unroll crescent roll and if dough isn’t seamless, pinch seams together, and carefully place completely over the casserole.
- Place dough over casserole and bake until golden brown.
