
Vegetarian Brunswick Stew

Pretty close to traditional Brunswick Stew made in the crock pot. Its perfect on a cool fall or winter day! Okra may be added, as well.

Servings: 8 servings
Ingredients
- 1 tablespoon olive oil
- 2 stalks celery, chopped
- To taste onion powder
- 1 package Morningstar Farms Meal Starters Grillers Recipe Crumbles
- 1 package Worthington Chick-ett, cubed
- 28 ounces whole peeled tomatoes, chopped with juice
- 1 cup ketchup
- 1 cup potatoes, chopped
- 1/2 cup BBQ sauce
- 1 red bell pepper, chopped
- 14 ounces cream style corn
- To taste salt
- To taste pepper
Directions
- Heat olive oil in skillet and sautee celery.
- Add Crumbles and onion powder, heat through.
- Place Crumble mixture in crockpot on high heat. Add remaining ingredients.
- Cook on high for 3 hours, and switch to low for an additional 2 hours.
- Top each serving with light sour cream, if desired.
