
Sonora Vegetarian Dog

I first learned about the Mexi-style hot dog dish on the TV show Man v. Food, when the host visited El Goero Canelo. This Tuscon specialty is made vegetarian using faux hot dogs and bacon. Layer toppings as you see fit - they can get a little messy.

Servings: 8 pieces
Ingredients
- 8 vegetarian hot dogs
- 8 slices vegetarian bacon
- 8 oblong shaped unsplit buns
- 14 ounces pinto beans, reserve, rinsed & reserving 1 tbsp juice
- 1 can small, salsa verde
- 1 onion, chopped
- 1 cup tomato, chopped
- To taste light mayonnaise
- To taste yellow mustard
- To taste onion powder, salt, pepper
Directions
- Heat oven to 350 degrees.
- Wrap one strip of vegetarian bacon around one vegetarian hot dog. Secure the bacon using toothpicks at either end point, if desired. Place on a baking sheet and cook for 5-10 minutes or until heated through.
- Meanwhile, cut two shallow slits in the top of each but about an inch apart. Hollow out most of the bun, so there is a cradle for your dog and toppings, but leave enough for support.
- Heat pinto beans, 1/2 tbsp of juice, onion powder, salt, pepper and chili powder over low heat.
- Scoop a layer of pinto bean on bottom of bun. Add the bacon wrapped dog. Top with tomato, onion, 1 tbsp of salsa verde, mustard and mayonnaise.
