
Cauliflower Broccoli & Rice Casserole

The cauliflower in this casserole takes center stage, accompanied by sharp white cheddar, broccoli and buttery cornflake crumbs.

Ingredients
N;- 2 bags Frozen broccoli & cauliflower
- 1 cup uncooked brown rice
- 2 tablespoons butter, melted
- 8 ounces bag, shredded shartp white cheddar cheese
- 1 can 98% fat free cream of mushroom soup
- 1/2 cup low fat sour cream
- 1 + cup cornflake crumbs
- 1-2 tablespoon butter
Directions
- Preheat oven to 350 degrees.
- Boil frozen broccoli & cauliflower per package directions, drain and set aside
- Prepare rice according to package directions
- In a sauce pan melt 1-2 tablespoons of butter (depending on preference and amount of cornflake crumbs to be used). Mix in desired amount of cornflake crumbs.
- In a casserole dish, combine rice, broccoli & cauliflower and remaining ingredients. Mix well.
- Spread cornflake crumb mixture evenly on top.
- Bake for 30 minutes.
