
Texas Potato Casserole

This is one of my favorite dishes made by my mother - a wonderful cook. It goes great with BBQ dishes and never lasts long at potlucks.

Ingredients
- 1 package Simply Shreds Shredded Hash Brown Potatoes
- 8 ounces low fat sour cream
- 10.75 ounces 98% fat free cream of mushroom soup or cream of potato
- 1/4 cup butter or margarine
- To taste onion powder
- To taste salt
- To taste pepper
- 2 tablespoons butter or margarine
- 1 cup Cornflake Crumbs
Directions
- Preheat oven to 375 degrees.
- In a casserole dish, mix together sour cream, 1/2 cup melted butter, soup, potatoes and seasonings.
- Melt 2 tbsp of butter in a small pan. Mix in Cornflake Crumbs.
- Top casserole with Cornflake Crumb mixture and spread evenly.
- Bake covered for 45 minutes, remove cover and bake an additional 5-10 minutes or until topping is browned slightly.
