Banana Oat Muffins

Every year my mother-in-law and I shop the 100 Mile Yard Sale in Central Pennsylvania. We are bargain shoppers through and through. For the most part, my home decor for each of the major holidays was purchased almost exclusively through yard sales.
I also like to shop at yard sales for supplemental items for both mine and my son’s wardrobe. As a life-long fashionista, I am very selective about what I buy and how much I’ll pay.
We are gone literally from 7:00 am until about 6:00 pm while we are shopping and exploring the county just north of us. In the beginning, we would rely on fried foods and baked goods for nourishment and then I’d feel guilty and disgusting the rest of the day.
Last year, I wised up and started packing a cool and healthy lunch. And rather than the fattening baked goods for breakfast, I decided to make a low-ish carb Banana Oat Muffins instead.
This recipe doesn’t contain too much flour so the muffin tops didn’t puff up like a standard muffin. But they were very moist, dense and filling. And the chocolate chips made them taste like a bit of an indulgence, but at 4 points they fit perfectly into my daily points plan!
- 1-1/2 cups over-ripened bananas, mashed
- 1 egg
- 1 cup flour
- 1 cup old fashioned oats
- ½ cup chocolate chips
- ½ cup packed brown sugar
- ⅓ cup applesauce
- 2 tsp baking powder
- ½ tsp baking soda
- 1 tsp vanilla extract
- 1 tsp salt
- Preheat oven to 350.
- Spray a muffin tin with cooking spray.
- In a large bowl, mix together the flour, salt, baking powder and baking soda.
- Gently fold in the mashed banana, oats and chocolate chips.
- Bake for 15 – 20 minutes. Since these muffins are so dense, they may need to bake longer. Keep checking them and bake until they are golden brown.

This looks like a great recipe I love the applesauce for moisture and sweetness and the chocolate chips are a nice touch.
