The only muffins I have ever made were of the “just add milk” variety. But when I learned that the latest theme for the Breakfast Club event hosted by Fuss Free Flavours and Fingers and Toes blogs was muffins, I decided it was time to make some from scratch.

So this marks two firsts for me: first homemade muffins and first food blog event!

I have been craving a coffee and chocolate dessert for some time now. So I thought this would be the perfect application.
I followed this basic recipe from the All Recipes site. I added an extra 1/4 up of flour, used soy milk instead of milk, added 3 tbsp of instant coffee and generous cup of semi-sweet chocolate chips.
There were super moist and delicious! Not too shabby for my first try at muffins!
Mocha Cappuccino Muffins
2 cups all-purpose flour
1 tablespoon baking powder
1/4 teaspoon salt
1/2 cup butter, softened
1 cup white sugar
2 eggs
1 teaspoon vanilla extract
1 cup soy milk
3 tbsp instant coffee granules
1 cup semi-sweet chocolate
Directions
1. Preheat oven to 350 degrees. Grease 12 muffin cups.
2. Stir the flour, baking powder, and salt in a bowl.
3. In a separate bowl, beat softened butter and sugar until smooth.
4. Add one egg and beat again.
5. Add vanilla, soy milk and the second egg.
6. Mix in dry ingredients, coffee granules and chocolate chips until ingredients are just moistened.
7. Pour into muffin tins and bake for 30 minutes.
