Lasagna Soup

Hello, Fall. Nice to see you again. Its been a long time…a year, in fact. I’ve missed you so.
Saturday marked the first official day of Fall. And it’s almost as if the weather was aware of the date on the calendar.
That morning was crisp and cool. I went for an early morning hike up a mountain with my hiking group. Some of the trees are starting to turn colors, but mostly they are still green.
In the afternoon, my son had a flag football game. There was a chill in the air. We had to wear sweatshirts!!!
In the evening, we watched the Steelers’ game on TV and ate soup.
It was the perfect way to welcome in this new season – my favorite season – Fall.
Our inaugural soup recipe was inspired by Margo at Joyful Homemaking which I found through one of the linky parties I frequent. The only difference between our recipes is that I vegetarianized it.

- 28 oz can petite diced tomatoes with garlic and olive oil
- 2 cups pasta sauce
- 1 package Morningstar Meal Starters Recipe Crumbles, thawed
- 2 cups vegetable broth
- 1 cup water
- ½ tbsp Italian seasoning
- 2.5 cups cooked pasta noodles of your choice
- Shredded parmesan cheese
- Prepare pasta according to package directions.
- In a saucepan, combine first six ingredients and simmer over medium heat for 20 minutes.
- Serve over (1/2 cup) noodles and sprinkle (2 tbsp) parmesan cheese on top.
