Peach Salad

I love linky parties!  They allow me to discover new blogger friends and recipes I wouldn’t have otherwise.

Now that I’m on Weight Watchers, I’m paying particularly close attention to linkys that are on the healthier side (normally, I was attracted to any and all desserts).

Don’t get me wrong, I still browse the desserts and bookmark them for a later day!

I came across a recipe via the most recent Foodie Friday link party at Simple Living with Diane Balch for Georgia Caprese Salad created by Sam of My Carolina Kitchen.

Still fearful of purchasing peaches, Sam’s post gave me the confidence to pick out the right peaches and I was inspired to make a version of my own.

While I’m sure her version is way better, I had to pare down and substitute a bit to keep the Weight Watchers points on the low side…because I simply can’t spare alot of Points on side dishes!

Peach Salad
Recipe type: salad
Serves: 1
  • 1 peach, diced
  • 2 tbsp reduced fat feta cheese
  • ½ tbsp honey
  • 1 tsp fresh lemon juice
  • ½ tsp dried ground mint
  1. In a resealable bowl, mix together honey and lemon juice.
  2. Add in peaches, close the lid and gently shake.
  3. Chill in the refrigerator for at least an hour
  4. Serve topped with feta and mint.
