Peanut Butter and Jelly Bars

In honor of getting back into the rhythm of school, I made Peanut Butter and Jelly Bars as an after school snack for my son.

Does any food scream “back to school” more than a PB&J?  Although most kids probably live off of these sandwiches all year round, I have distinct memories of eating this lunch box favorite most days of the week.

I loved it when the jelly would saturate the bread and make it a little soggy in spots.  Is that gross?

Anyways, the recipe had to be an easy one.  I really try to avoid the extra steps of gathering multiple containers, measuring and putting away multiple containers.  So when I found a cake mix Peanut Butter and Jelly Bars recipe, I knew it was for me!  The problem is, however, adding peanut butter into anything you have to mix automatically is no longer “easy.”  Because peanut butter is sticky and hard to mix.  And I don’t have a stand mixer, so I’m stuck doing all the work myself!

But despite the arm fatigue, the bars turned out very well!

Peanut Butter and Jelly Bars

Ingredients
  • yellow cake mix box
  • ½ cup peanut butter
  • ½ cup butter, softened
  • 1.5 cups oats (rolled or quick cooking, doesn’t matter)
  • 1.5 cups grape jelly
  • 1 egg
Instructions
  1. Preheat oven to 350 degrees.
  2. Spray a 13 x 9 pan with cooking spray.
  3. Mix together peanut butter, butter, egg and cake mix.
  4. Add in oats.
  5. Press ½ the mixture into the casserole dish.
  6. Spread jelly over the mixture. (add more jelly if you need to)
  7. Crumble the ½ of the mixture over the jelly layer.
  8. Bake for 35 minutes and cool completely before cutting.
