While at home visiting my family. My mother and I took my son to an orchard. I have fond memories of my family taking me to “pick your own” at fruit farms. And this was an experience I wanted my little one to have, as well. It just so happened that my visit collided with peach picking season.
So off we went on a tractor-pulled wagon to the peach orchard. My son had a wonderful time picking out the best peaches he could reach. They weren’t ripe enough until I returned home, nearly a week later.
That day, I made a peach cobbler. The cobbler recipe I used was from the AllRecipes website. The peach part of the recipe I used from my mom’s 1970′s edition of the Betty Crocker Cookbook. This was her go-to place for recipes and she gave it to me this visit. It made me feel so connected to her as I followed the recipe, it was refreshing to know that I am slowly becoming my mother!
Well the peach cobbler turned out FABULOUS! My husband and brother-in-law were beyond impressed. I topped it with vanilla bean ice cream. The picture didn’t turn out very well, but don’t hold that against the recipe!
Peach Cobbler
Cobbler:
1 cup all-purpose flour
1/2 cups sugar
1 teaspoon baking powder
1/2 teaspoon salt
6 tablespoons cold butter
1/4 cup boiling water
Peach Mixture:
1/2 cup sugar
1 tbsp cornstarch
4-6 sliced fresh peaches
1 tsp lemon juice
1. Preheat oven to 400 degrees
2. For the cobbler: In a large bowl, mix the flour, sugar, baking powder, and salt. Cut in butter until the mixture resembles coarse crumbs. Stir in 1/4 cup boiling water just until mixture is evenly moist.
3. For the peach mixture: In a saucepan, mix 1/2 cup sugar and cornstarch. Stir in peaches and lemon juice. Cook over medium heat stirring constantly, until mixture thickens and boils. Boil and stir 1 minute. Pour into 9×9 baking pan.
4. Drop dough on top of peach mixture and bake 25 minutes.
