Vegetarian Chili Five Ways
September 11th, 2012

You may already know that Chili Five Ways typically refers to a dish that involves chili, cheese, onions and beans over spaghetti noodles.
But that is not exactly the combination of this particular Chili Five Ways. Because the titular recipe is not really a recipe and more like a way to use up some leftovers.
I made chili dogs last weekend. This is our standard “tailgate” dish of the opening weekend of college football. But I had quite a bit leftover.
So rather than have a repeat of the prior weekend, I made vegetarian Chili Five Ways instead.
My chili already had beans and I don’t eat onions, so my amended version of the five ways (ways? why ways?) consisted of chili, cheese, chili sauce and sour cream over spaghetti noodles.
It was really good. Well, almost anything savory that is put over pasta is really good. But the chili is a nice change from your standard tomato sauce spaghetti (which I love!).
- Vegetarian Chili (either your own recipe or a canned)
- Spaghetti Noodles
- Shredded Cheddar Cheese
- Sour Cream
- Chili Sauce
- Prepare noodles according to package directions.
- Each serving of cooked noodles should be topped with 2 tbsp of chili sauce, heated chili, shredded cheddar cheese, and sour cream.
