Vegetarian Living

One of the biggest hurdles in going vegetarian for many is the fear of not being able to enjoy meat. But culinary technology has come along way, and there are lots of wonderful vegetarian meat substitutes available on the market.

Some are similar to the real deal and many are even better. Honestly, does anybody really enjoy finding gristle in their beef, cartilage in their chicken or feces in their shrimp?

Below I’ve compiled a list of links to the manufacturers of the products I use the most in my vegetarian cooking!

Vegetarian Chicken Substitute
Worthington Chick-etts
is my absolute favorite substitute. It can be hard to find so check the freezer department of your local health food store. You can often ask such stores to special order it for you by the case, but you can expect to pay about $9.00 for a roll.
Gardein Chick’n Scallopini is easier to find at grocery stores with large natural and vegetarian food departments. Its frozen and works well in casseroles when thawed and chopped.
Morningstar Farms Meal Starters Chik’n Strips are available in most grocery stores frozen foods departments. This product is good for soups or in wraps.
Morningstar Farms Chik’n Nuggets are great fake chicken nuggets. Best when baked in the oven then dipped with honey mustard, BBQ or sweet and sour sauce!

Vegetarian Beef Substitute
Gardein “Beef-less” Tips can be used as a substitute when recipes call for beef tips or stew meat. Gardein products are typically found in grocery stores with large natural and vegetarian food departments.
Morningstar Farms Meal Starters Griller Recipe Crumbles are THE best vegetarian ground beef substitute!
Yves Good Dog vegetarian hot dog is my #1 favorite fake dog. My local Wal-Mart started carrying this product in the produce section.
Light Life Smart Dog is my #2 favorite. The bonus for the Smart Dog is that this vegetarian hot dog is fat free!

Vegetarian Sausage Substitutes
Morningstar Farms Meal Starter Sausage Style Recipe Crumbles are a good vegetarian sausage substitute to use in casserole and Italian dishes.
Morningstar Farms Maple Flavored Veggie Sausage Patties are so good and greasy, you can’t even tell its fake.
Tofurkey Beer Brats are great to use in casseroles that call for grill-able type sausages.

Miscellaneous Vegetarian Meat Substitutes
Tofurkey Roast, which is deliciously stuffed with wild rice, is a great substitute for the traditional Thanksgiving or Christmas main dish. Prepare the baste per the package direction and drizzle with the “Giblets” & Mushroom Gravy for a dish far and away better than turkey.
Morningstar Farms Hickory BBQ Riblets make for a yummy heat and eat lunch. I like to heat and put in a hot dog bun for a McRiblet-type sandwich.
Morningstar Farms Veggie Bacon Strips fake bacon strips for EXCELLENT. I use these quite often in sandwiches, casseroles or for breakfast.
Veggie Patch Meatless Meatballs are an outstanding frozen vegetarian meatball substitute.  I would never attempt to make my own “meat”ball from scratch and these are better than anything I could make anyway!
